A Shared Vision

Paul McCabe and Amy DiBiase may have first shared a kitchen in 2001, but their culinary journeys and styles have since ebbed and flowed. Now reconverging at Vistal, they have combined their contrasting interpretations of local cuisine and created an entirely unique menu, as singular as the city it represents.

    Paul McCabe

    A former James Beard Foundation “rising star of American cuisine,” Paul brings expert knowledge of Californian, Southwestern, and Asian cooking to Vistal’s team. During his 30-plus year career, he launched L’Auberge Del Mar’s popular KITCHEN 1540 and has worked the kitchen at La Jolla’s La Valencia hotel and Royal Palms Resort & Spa in Phoenix.

    Amy DiBiase

    Known for taking Californian style to Italian and French cooking, Amy is among San Diego’s most respected chefs. She’s spent more than 10 years in various local kitchens from Tidal to The Shores, and has accumulated many awards and accolades along the way.
